Sage saltimbocca fish

Sage saltimbocca fish

Sage saltimbocca fish is a simple gourmet dish that delivers delicate flavours with minimal prep. Fresh white fish is layered with fragrant sage leaves, lightly seasoned, and wrapped in thin prosciutto for a salty, crisp finish. The fillet gently bakes at low heat, keeping the flesh moist and tender. A quick Espelette-pepper butter sauce adds a warm, subtly spicy touch that complements the savoury wrap without overpowering the fish. Serve the fillet with the sauce on the side for an elegant, restaurant-style meal perfect for weeknights or special occasions.
