Ingredients

6 chicken breasts filleted
2 cans of peach chunks in syrup
250 g peach jam
2 tbsp vinegar
1 bunch of spring onions
2 white onions
3 tbsp soya sauce
1 bottle of fish sauce

Instructions

  1. Place the chicken breasts in an oiled baking tray.
  2. In a pan, simmer the peach chunks, jam and vinegar for 45 min.
  3. Allow to cool.
  4. Add the bunch of chopped spring onions, the thinly sliced white onions, soya sauce and fish sauce. Season with pepper.
  5. Pour the marinade on the chicken breasts.
  6. Refrigerate for at least 24h.
  7. On the day to serve the chicken, cook in the oven for 45 min.
