Ingredients

2 rolls of puff pastry
4 eggs
1 egg yolk
175 g ground almonds
100 g sugar
100 g salted butter
1 charm

Instructions

  1. Layer the tin with one sheet of pastry. Do not prick with a fork.
  2. Mix the almond. powder, sugar, 3 eggs and the softened butter in a bowl.
  3. Pour the mixture on top of the pastry lined tin. Do not forget the charm!
  4. Wet the edge of the bottom layer pastry (2 cm) with a brush.
  5. Cover with the top layer of pastry, press down the edges moistened with the white egg mixture diluted down with some water.
  6. Make decorative lines on the top and brush with the egg yolk. To prevent the pastry from puffing up too much, you can make a tiny hole (1 cm) in the center before baking in the oven.
  7. Bake for 20 to 30 min at 200°C. Keep checking regularly.

Tips

Once the galette is baked,you can cover it with sugar syrup. (5cl of boiled water with 50g of sugar)
