Ingredients

1.8 kg chicken
350 g plain yogurt
1 tsp whole cumin seeds
1 tsp salt
Oil

Marinade:
1 tsp turmeric powder
2 tsp chili powder
1 small red onion
2 garlic cloves
1 thumb-sized knob of ginger

Instructions

  1. Skin the chicken and remove any visible fat. Drain in absorbant paper.
  2. Cut the chicken in big pieces. Place them in a basin and pour yogurt over them.
  3. Peel and chop the onion, garlic cloves and ginger.
  4. Add all the ingredients for the marinade and rub well into the meat. Leave covered overnight in the fridge.
  5. Heat 1 tbsp of vegetable oil in a wok. Add cumin seeds to flavor the oil.
  6. When seeds pop, add the chicken pieces and the rest of the marinade.
  7. Bring to a boil, and then turn the heat down to cook slowly till chicken pieces are tender, which will take
    1 h. Do not be alarmed if the dish seems dry as the chicken pieces will produce juice to form a thick gravy.
  8. Season with salt and serve with roti or rice.
