Ingredients

9 boneless chicken legs
1 chicken stock cube
2 onions
1 bunch of mixed herbs
1 carrot
1 knob of butter
1 celery stalk
Olive oil
10 cl sherry vinegar

Instructions

  1. Slice the onions, shred the carrot and chop the celery.
  2. Fry the chicken with butter and oil until golden.
  3. Season with salt and pepper. Remove from the heat and put aside.
  4. Remove the chicken and replace with the onions. Fry the onions for 5 min, then add the shredded carrot and the celery for 5 more min.
  5. Add the vinegar, the stock diluted in a small glass of hot water and a bunch of mixed herbs.
  6. Return the chicken to the pan, turn the heat down and simmer for 30 min.
  7. Before serving, you can strain the sauce and add cold butter cubes, whipping well.
