Ingredients

50 g Feta cheese
7 black olives
20 g liquid cream
Parsley leaves
1 ripe tomato
1 tbsp olive oil
2 gherkins
20 rocket leaves

Instructions

  1. Mix Feta and cream with a fork, place at the bottom of each verrine.
  2. Mix rocket leaves in oil and let them infuse.
  3. Peel and seed the tomato, dice it, then mix with diced olives and gherkins.
  4. Add the parsley, oil, salt and pepper.
  5. Drain the rocket and oil mixture and keep only the green oil.
  6. Put this oil on top of the Feta mixture.
  7. Add the tomato mixture.
