Ingredients

8 egg whites
20 cl milk
100 g sugar
10 cl liquid cream
20 g corn flour
125 g ground almonds
300 g dark chocolate ( > 60% cocoa)
100 g icing sugar
50 g Cointreau (optional)

Instructions

Biscuit:

  1. Preheat the oven to 180°C.
  2. Whisk whites with sugar until smooth and glossy.
  3. Sift cornflour with almond powder and icing sugar.
  4. Add gently to the whites.
  5. Pour ½ of the mixture onto an oven tray covered with greaseproof paper. Form a smooth even rectangle.
  6. Cook for 12 to 15 min. Remove from the baking sheet when cool.
  7. Repeat with the remaining mixture.

Ganache:

  1. Bring the milk and cream to boil in a sauce pan.
  2. Remove from the heat and add small chocolate pieces and Cointreau. Beat well to obtain a light ganache.

Assembly of the cake:

  1. Cut each biscuit in half (to get four equal rectangles).
  2. Place one of the biscuit rectangles onto a serving plate.
  3. Cover with the ganache.
  4. Repeat layering with the other 3 rectangles.
  5. Spread the ganache on top of the cake.
  6. Refrigerate for at least 2h.
  7. Trim the sides if necessary to give a neat appearance
