Ingredients

4 tails of rock lobster (cooked)
3 pink grapefruits
6 oranges
1 lemon
2 eggs
1 tablespoon of Savora
25 cl of olive oil
1 pinch of salt and pepper

Instructions

  1. Peel the grapefruit and 5 oranges, make sure you remove the white pith. Cut into quarters and store in a cool place.
  2. Mix the egg yolks with the Savora. Set aside.
  3. Mix the oil with the lemon juice and the remaining orange, then add to the mixture, stirring constantly.
  4. Beat the egg whites until stiff and gently fold them into the previous preparation. Set aside.
  5. Plunge the rock lobsters in boiling water for 5 minutes, drain and cut in half lengthwise. Season with salt and pepper.
  6. Arrange on plates, adding the citrus quarters and a dash of sauce. Serve immediately.
