Ingredients

1 cannelloni pack
2 tbsp olive oil
500 g chopped spinach
1 pinch of ground nutmeg
100 g ground almonds
100 g ground walnuts
200 g Pecorino cheese
1L milk
200 g grated Parmesan cheese
300 g Ricotta cheese
200 g Mascarpone or Gorgonzola cheese

Instructions

  1. In a pan, slowly melt ricotta, pecorino, mascarpone and half of the parmesan.
  2. Slowly add the milk to get a smooth liquid.
  3. Wilt the spinach with the olive oil in saucepan.
  4. Add the ground almonds, ground walnuts, remaining parmesan, pepper and ground nutmeg.
  5. Add 1/3 of melted cheeses to the spinach mix.
  6. Spoon this mixture into the cannelloni.
  7. Place the cannelloni in one layer in an ovenproof dish.
  8. Scatter the cheese mixture on top of the cannelloni.
  9. Heat in the oven for 30 min at 200 °C
