Ingredients

1.6 kg pork fillet (200 g/ pers)
500 g dry prunes
150 g bacon bites
2 tea bags ( English breakfast, Earl Grey)
2 onions

Instructions

  1. 4h before putting the pork in the oven, put the prunes in a bowl with hot tea. Leave the prunes to infuse.
  2. Put the pork fillet into an oven-proof dish, with onions cut in small pieces, bacon bites, salt and pepper.
  3. Baste the meat with half of the tea infusion.
  4. Put the dish in the oven.
  5. After 30 min, turn the pork fillet, add the prunes. Re-baste the meat with tea.
  6. Continue to baste regularly with the rest of tea, until the end of cooking.
  7. The pork is ready to serve when the meat is not medium anymore (check with a knife).

Tips

Serve with rice or mashed potatoes.
