Ingredients

400 g pork neck
1 bunch of parsley
150 g smoked bacon
150 g pork liver
10 cl Armagnac
150 g bacon
2 carrots
1 celery stalk
1 onion
2 garlic cloves
Salt (15 to 20 g/kg)
1 tbsp flour
Aromatic herbs: sage, thyme, rosemary, bay leaves, tarragon,…

Instructions

  1. Marinate for a few hours all ingredients in Armagnac.
  2. Finely chop all the ingredients (do not blend them).
  3. Pour in a terrine, press and decorate on top with bay leaves.
  4. Cover and cook in bain-marie in the oven for 1h30 to 2h at 120°c
  5. Allow to cool in the oven, then refrigerate at least for one night.
