Ingredients

1 kg mangoes
100 g butter
1 lemon juice
1 vanilla pod
60 g grated coconut
150 g flour
5 cardamom seeds
1 lime zest
120 g cane sugar

Instructions

  1. Preheat the oven to 180°C.
  2. Using fingers, rub together the flour, butter, coconut, cane sugar and lime zest until you obtain fine crumbles.
  3. Peel the mangoes, cut them into pieces and put them in another bowl.
  4. Add the lemon juice.
  5. Scrape the vanilla and the cardamom. Mix.
  6. Grease a tin.
  7. Pour the mango mixture in and cover with the crumble.
  8. Bake for 25 to 30 min.
