Ingredients

800 g eggplants
125 g Mozzarella cheese
500 g tomato sauce
Salt, pepper
Oregano
1 tbsp olive oil
Pitted olives

Instructions

  1. Cut the eggplant into 1 or 2 cm slices.
  2. Heat in the microwave on maximum power for 15 min.
  3. Preheat the oven to 200 C.
  4. Drain the eggplant for 1-2h.
  5. Season half of the eggplants with oregano, salt and pepper and 1 tbsp of olive oil.
  6. Pour over half of the sauce and olives. Season with oregano and pepper.
  7. Add the rest of the eggplants. Season again with oregano, salt and pepper and cover with the remaining sauce.
  8. Layer the top of the dish with thin slices of Mozzarella.
  9. Cook for 30 min.
