Ingredients

1 kg prawn tails
Coriander or parsley
300 g French beans
Olive oil
2 carrots
Sherry vinegar
¼ celery stalk
Mustard
1 zucchini
1 tsp soya sauce
4 small spring onions

Instructions

  1. Boil the French beans, using a large pot with a lot of water and a lot of salt. When they are cooked, rinse in fresh water.
  2. Remove the centre of the zucchini with seeds. Thinly slice the celery, carrots and zucchini. Steam them for 3 min: they need to remain raw inside.
  3. Prepare a salad dressing to your taste. Mix in this order: salt, pepper, sherry vinegar, mustard. Then,add olive oil and onions.
  4. Heat a large pan or a wok with 2 large tbsp olive oil and, when the oil is very hot, fry the prawns for 2 min only.
  5. Garnish each plate with a layer of French beans, the
    sliced vegetables and the prawns on top.
