English parsley bread

This savoury loaf is an easy, flavourful bake perfect for picnics, buffets, or a simple lunch. A mixture of beaten eggs, sautéed onions, fresh parsley, cheese, mustard, and tender ham (or bacon) comes together into a soft, hearty bread. Baked until the centre is firm and sliceable, it’s best enjoyed chilled and paired with a light tomato sauce for a refreshing finish.

Ingredients

6 eggs
100 g flour
100 g butter
1 tbsp mustard
1 big bunch of English parsley
1 onion
100g grated Gruyère cheese
100 g ham in cubes or bacon bits

Instructions

  1. Beat the eggs.
  2. Fry the onion in a bit of olive oil and finely chop the parsley.
  3. Mix all ingredients.
  4. Bake in the oven at 180° C for 45 min. Cooked when the middle of the bread is dry (check with a knife).
  5. Serve cold with a tomato sauce
