Ingredients

2 large eggplants
8 fresh tomatoes
1 goat cheese log
Fresh basil leaves
150 g grated Gruyère cheese

Instructions

  1. Preheat the oven to 190°C.
  2. Cut the eggplants into 1 cm slices and steam.
  3. In an oven-proof dish, layer half of the eggplant slices, then top cover with the tomato slices and half of the goat cheese slices.
  4. Add basil leaves, salt and pepper.
  5. Continue with a second layer of eggplant slices, tomato slices, goat cheese slices and fresh basil. Season with salt and pepper.
  6. Scatter the grated cheese on top and heat in the oven for 50 min.
