Ingredients

½ pumpkin
1 tbsp oil
35 cl coconut milk
1 shallot
Ginger

Instructions

  1. Slice 2 cm of ginger.
  2. Fry ginger and shallot in oil.
  3. Add the pumpkin cut into pieces and simmer for 5 min.
  4. Pour the coconut milk; stir for 2 min, do not bring to a boil.
  5. Add up to 50 cl of water (water should cover the pumpkin). Keep stirring until the pumpkin is soft. Season with salt and blend.
