Ingredients

100 g goat cheese log
2 teaspoons of single cream
1 shallot
6 mint leaves
6 sprigs of chives
salt & pepper
6 sheets of ‘brick’ pastry (warqa)
15 g of butter

Instructions

Preheat the oven to 180°C.
Peel and slice the shallot. Pan fry until it becomes translucent in a knob of butter.
Mix the shallot, mint and chives with the goat cheese, salt and pepper.
Mix and thicken the sauce with 2 tsps of single cream.
Fold each sheet of pastry in half and cut each sheet into 4 strips.
Cut out branches into each strip, putting the foot of the tree trunk at the fold.
You can make a cardboard pattern to give it a more regular look, and cut with a sharp knife or scissors.
Melt the butter. Brush the Christmas trees with melted butter.
Roll the goat cheese into small sausages and place them inside each tree. Press so that both sides of the brick sheet stick together.
Place a toothpick through the foot of the tree.
Place on a baking sheet lined with parchment paper.
Bake 6 to 8 minutes
