Ingredients

200 g dark chocolate
6 eggs
1 pinch of salt
30 sponge fingers
1 can of pears

Instructions

  1. Melt the chocolate with 4 tbsp of water.
  2. Beat the chocolate and the egg yolks.
  3. Beat the whites with a pinch of salt.
  4. Incorporate the whites into the chocolate mixture.
  5. Place chocolate mousse for a minimum of 3h in the fridge.
  6. Soak the sponge fingers in the pear syrup and place them in a " Charlotte" tin (on the sides and the bottom).
  7. Alternate a layer of pears, one of chocolate mousse and one of soaked sponge fingers.
  8. Refrigerate for a minimum of 3h.
