Ingredients

200 g dark chocolate
3 egg yolks
100 g sugar
1 stick of cinnamon
40 cl liquid cream
1 clove
1 star anise clove

Instructions

  1. Pour the cream in a saucepan.
  2. Add the stick of cinnamon broken in little pieces, the clove and the star anise.
  3. Bring to a boil and remove from the heat at first bubbles. Cover and leave to infuse.
  4. Melt the chocolate.
  5. Whisk the egg yolks with the sugar and the melted chocolate.
  6. Filter the liquid cream.
  7. Pour it on the chocolate and mix well.
  8. Pour the mixture in a saucepan and heat for 5 min at low heat. Do not boil it.
  9. Divide the cream into 6 small cups and put them in the fridge for 2h.
