Ingredients

8 chicken breasts
2 tsp grated ginger
1 crushed garlic clove
3 tsp fish
Sauce
Lime wedges
Sauce
2 tbsp lime juice
2 tsp peanut oil
2 tbsp grated palm sugar
3 tbsp fish sauce
4 shallots finely chopped
2 tsp soya sauce
2 crushed garlic cloves
200 ml coconut milk
2 tsp fresh grated ginger
2 small red chili peppers
125 g peanut butter

Instructions

  1. Slice the chicken breasts in 3, lengthwise.
  2. Mix the chicken with the garlic, fish sauce and ginger.
  3. Cover and refrigerate.
  4. In a saucepan, heat the oil at medium heat, fry the shallots, garlic, ginger and chillies for 5 min until golden.
  5. Add the remaining ingredients, reduce heat and let it simmer until the mixture thickens.
  6. Grill the chicken pieces and put one per skewer
  7. Prepare some skewers with lime wedges.
  8. Serve with satay sauce.
