Ingredients

6 carrots
Whipping cream
1 potato
Fennel seeds
6 anise stars
1 vegetable stock
1 tbsp olive oil

Instructions

  1. Prepare the vegetable stock.
  2. Peel and slice the carrots and potato. Heat the olive oil in a pan and simmer carrots and potato for 5 min.
  3. Add vegetable stock and 2 anise stars. Boil for 25 min.
  4. Remove anise stars and blend all the ingredients.
  5. Season with salt and pepper.
  6. Whip the cream.
  7. Pour into individual glasses and add 1 tbsp of whipped cream on top.
  8. Garnish each glass with 1 anise star and a few fennel seeds.

Tips

Season with care as the vegetable stock is yet quite salty.
