Apple juice and honey duck fillet

Ingredients

2 duck fillets
1 tbsp honey
65 cl apple juice
Salt, pepper

Instructions

  1. 12h before, gently heat the apple juice with honey, salt, pepper and 45 cl water. Do not bring to a boil.
  2. Criss-cross the skin of the fillets and sear them in a frying pan until golden skin-side down for 3min.
  3. Add them to a pan with the apple juice and honey mix. Cook on low heat for 10 min and flip them over.
  4. Remove the fillets from the pan and set them aside. Let the cooking juice cool down.
  5. Return the fillets to the warm sauce. Cover them with cling wrap and leave to marinate for 12h in the fridge.
  6. Remove the fillets and reduce the cooking juice by ¾ on a high heat. Mix to get a smooth sauce.
  7. Put the fillets, skin-side down in a pan and cook for 3 min on high heat (until skin becomes crispy).
  8. Flip them over and cook for 3 min on medium heat.
  9. Slice the fillets and pour the sauce over before serving.

Tips

Very good with wild rice or quarters of apples fried with butter and lemon juice.
